Contact Grill Meat

Grilled meat locally known as Nyama choma  is a loved delicacy.It is commonly enjoyed with family and friends at get togethers,usually an outdoor activity.Grilling is actually a healthy way of cooking.But what if you to achieve the same great taste in doors? Without the hustle of smoky charcoal?Perharps you are huge on saving trees and the environment and charcoal just wont cut it?A contact grill is your best bet!here is a great way to go about it.

Ingredients

400grams beef(I chose the T Bone for this as it is tender meat)

For your marinade:

Juice of 1 orange

Half cup oil

1 tbs soy

1 tbs worcestershire

Salt

Black pepper

Royco

Basil

Method

Marinate your beef for about 2 hours

Heat up your contact grill like so,

Once hot,place your beef pieces on the hot grill,and cover the grill

Six minutes later….

Notice the grill marks on the beef😊

Six minutes should be good time for your beef to be well done

Serve and enjoy.

MelonBerries Fruit Punch

This recipe right here is not only sweet and healthy but is bursting with Vitamin C goodness. The Kiwi fruits added have more than 3 times the Vitamin C in Oranges and is too good for you and your family!

The Watermelon and the Berries anf Grapes are full of antioxidants which will repair your cells for a better you.

Ingredients

1/2 medium sized watermelon,cut to chunks

2 kiwi fruits,peeled and sliced

1 glass of mixed berries-grapes,blueberries and strawberries,cleaned

Method

Put all your ingredients above in a blender

Blend till smooth

Serve and enjoy

You can add ice cubes if you so wish

You can add honey if you have a sweet tooth,otherwise the punch does not need added sugar.

Scrambled Egg in Sauce

Eggs are high in Selenium great antioxidant,high in Vitamin B12 and Iron great for your blood and red blood cells and they are high in Vitamin B2 which boosts your energy by helping your body metabolize fats and protein. This is to mention but a few of the gains!

Besides,Eggs are high in protein and are extremely affordable.

Here is a Finger licking way to add Eggs to your diet.Enjoy.

Ingredients

4 eggs

2 tablespoon oil

1 onion,sliced

1 green pepper,chopped

2 tomatoes,blended

1 teaspoon tomato paste

1 carrot,diced

Salt to taste

Method

In a hot frying pan,put in your oil, add the eggs and scramble them(fry them) till well done

Remove from pan and set aside

In the same pan,add a little oil and onions and fry till translucent

Add in the green peppers and carrots and cook for about a minute

Add in the tomatoes and tomato paste

Add in salt

Finally,add in the eggs and let simmer for 2 minutes

Serve and enjoy.

Sweet Dumplings

These Dumplings are inspired by the Swahili Kaimati(Luqaimat among the Arab).They are really addictive, and make for great bitings.They are soft,sweet and yummy.Indulge.

Ingredients

3 cups flour

2 tablespoon baking powder

3 tbs sugar

2 cups warm milk or water

1 tbs oil

1 egg

Method

Mix all the ingredients in a bowl 

The consistency will be very thick(too thick for pancake but too sticky for bread or chapati dough,got it?right)

Put oil in a deep pan,enough oil to deep fry

Once the oil is hot,scoop using a teaspoon the flour mix and drop the scoop in your hot oil,using another spoon to completely unscoop the dough

Repeat the above step with the rest of the flour mix

Fry the dumplings till golden brown

Serve and enjoy!

Butternut Soup

Butternut soup is soup perfect for chilly weather. Its hearty,delicious and full of vitamin goodness. Butternut is full of Vitamin A which is good for your eyes,skin and health in general.

Its equally good as a starter for your mealtime.

Its equally high in potassium for high blood pressure,Vitamin C for your immunity,Iron for your blood,a superfood in its own right.

The benefits are immense but lets get started!

Ingredients

1 medium size butternut,peeled seeded and diced

1 tbs oil

1 onion

1 carrot

1 celery rib

2 cloves garlic

1 cup stock or water

Salt

Procedure

In a pan, fry your onions and garlic in oil

Add in the carrots,celery and butternut

Add in the salt and stock and let it boil till the butternut is soft

Once its done,put the mix in a blender and blend till smooth

Return the blended mix to your pan to reheat the mix

Keep stirring;if you find it too thick you can add more stock or water to your preference.

Serve and enjoy.

How to Make Beef Stock

Making beef stock is an integral part in any kitchen. Stock is not only full of vitamins,collagen and iron,but is guaranteed to add flavour to your meals especially your sauces and soups. Stock is soo good for your health! Here’s how to go about it.


Ingredients

2 kgs beef bones

2 tablespoon oil

1 onion

1 carrot

1 celery rib

3 garlic cloves

15 cups of hot water

1 tablespoon thyme

1  bay leaf

Large pot

Procedure

For a more intense flavour,roast your bones with the oil,either on your pot for 6 minutes either side or;Roast your bones in the oven at 200 degrees celcius for 20 minutes.

Tip: For best results use for roasting the pan you intend to use for simmering your stock. If not,when done roasting,add some water and scrap bottom of roasting pan using spatula and pour the scrape into your pot for simmering.

Once roasted,in your pot with the roasted bones add in the chopped vegetables that is,onion,garlic,carrot and celery and let the veggies cook for about a minute.

Add in the thyme,bay leaf and salt.

Add in the water.

Cover and let simmer for 2 hours.

Strain  the stock and let it cool once its done.

You can use immediately as desired.

You might however need to store it, 3 days in your refridgerator or 3 months in your freezer.

Tip:use BPA free containers,i bought these at 1 dollar each(about 100 kenyan shillings) and they hold 500 grams of liquid each.

Mahamri

Mahamri,a classic Swahili snack.

Its light,sweet, a common accompaniment for tea or coffee in many Kenyan and Tanzanian homes. Try our recipe,let us know,because its addictive!

Ingredients

3 cups plain wheat flour

1/2 tablespoon instant yeast

6 tablespoons sugar

1 and half cup warm water

2 tablespoon oil

Method

  • Mix all ingredients together in a mixing bowl and knead the dough very well(a mixer can save you the hassle with amazing result)
  • cover and let rise for 40 minutes to 1 hour(do not exceed to avoid over fermentation)
  • Roll your dough about 1 inch thick-too flat and  the mahamri will not be nice and soft
  • Cut the rolled out dough into triangular shapes,the size is to your preference
  • Heat oil in a pan;enough to deep fry till hot
  • Deep fry both sides till golden brown
  • Serve and enjoy

Baked Potatoes with Orange Thyme Chicken 

This make for a great meal to serve at dinner or lunch. The mix of thyme and the citrus flavor will give the chicken a unique delicious outcome.

Ingredients

For the marinade:

10 pieces chicken

1/3 cup olive or veg.oil

1/2 cup orange juice

1 tablespoon orange zest

Salt

Black pepper

1 tablespoon thyme

1 teaspoon paprika powder

1 teaspoon soy sauce

For the potatoes;

12 potatoes,peeled and cubed

2 tablespoons oil

Salt 

Black pepper

1 tablespoon paprika

1 teaspoon crushed garlic

Method

  • Mix the marinade ingredients with the chicken and marinate for 30 minutes to 2 hours
  • Preheat oven to 200 degrees celcius(about 400 fahreinheit)
  • Mix the oil,salt,pepper,paprika,and garlic meant for potatoes in a bowl
  • Lightly toss your potato cubes in the mix above to coat them
  • Spread the oiled potatoes in your baking tray and bake them for 30 minutes
  • In the same tray that has potatoes,create space and place the chicken pieces
  • Bake for another 20 minutes.
  • Serve and enjoy.

Pan seared Fish in White Wine Sauce

This is a classic meal,period!Impress your guests and family.

Ingredients

For the marinade:

  1. 1/3 cup oil
  2. 1/4 cup lemon juice
  3. 1 teaspoon crushed garlic
  4. 1 teaspoon basil
  5. 1 teaspoon thyme
  6. 1 teaspoon oregano
  7. Salt
  8. Black pepper

For the sauce:

  1. 2 tablespoon oil
  2. 1 onion,diced
  3. 1 teaspoon crushed garlic
  4. 1 carrot,cubed
  5. 1/2 cup celery,diced
  6. 1/2 cup white wine
  7. 1 cup stock
  8. 1/2 cup heavy whipping cream,optional
  9. 1 tablespoon butter or olive oil
  10. 1 tablespoon flour/all purpose
  11. 1 tablespoon herb mix(oregano,thyme,basil)
  12. Salt to taste

Method

  • Mix all the marinade ingredients,add in the fish and refrigerate for 30 minutes but less than 24 hours
  • Pour some oil in a hot pan,enough to shallow fry your fish
  • Place the marinated fish pieces on the pan and let sear,one side for a few minutes then turn over and sear the other side as well
  • Remove from pan and set aside
  • Now,using same pan used to sear the fish,add in the onions and saute till transparent
  • Add in the garlic and saute 
  • Add in the carrots and celery
  • Once browned,add in the wine,then using a spatula/wooden spoon scrape the bottom of pan
  • Let simmer for a few minutes
  • Mix in the butter or olive oil
  • Mix in the flour 
  • Throw in the herbs
  • Add in your stock
  • Add in the whipping cream,if you want a creamy result,but it is optional
  • Season with salt
  • Finally,place in your fish and let simmer 
  • Best served with mashed potato or rice

Lentil Curry

Lentils are packed with nutrients that are absolutely good for you,a great meal for the vegetarian but really,anyone can indulge in this awesome curry.


Ingredients

  1. 2 cups red lentils,boiled
  2. 1 large onion,diced
  3. 1 tablespoon garlic ginger paste
  4. 2 tablespoons oil
  5. 4 tomatoes,blended
  6. 1 tablespoon tomato paste
  7. 1 large carrot,cubed
  8. 1 green bell pepper,chopped
  9. 1 tablespoon curry powder
  10. 1 teaspoon turmeric
  11. 1 teaspoon dhana jeera(cumin and coriander)
  12. Salt to taste
  13. Black pepper,optional

Method

Heat oil in a pan

Add the onions and saute

Add in and saute the garlic ginger paste

Add in the carrots and bell pepper and stir

Pour in the tomatoes and stir

Mix in the tomato paste,curry powder,turmeric,dhana jeera and salt and stir

Add in the lentils,mix well and let simmer

Serve with Chapati,Rice or as preferred.
